Salat, 100g\u00a0Mesclun-Salatmischung, 20 Kirschtomaten,\u00a050g\u00a0schwarze Oliven (mit Stein, z.B. Ni\u00e7oise<\/p>\n<p>12\u00a0El\u00a0Oliven\u00f6l,\u00a05\u00a0El\u00a0Rotweinessig<\/p>\n<p>Salz, Pfeffer.\u00a0Zucker<\/p>\n<p>Parmesanhippen,\u00a0240g\u00a0junger Parmesan,\u00a020g\u00a0Pinienkerne<\/p>\n<h3>Zubereitung<\/h3>\n<ol>\n<li>\u00a0F\u00fcr die Tomaten-Vinaigrette Zwiebeln und Knoblauch in W\u00fcrfel schneiden. 3 El Oliven\u00f6l in einem Topf erhitzen, Zwiebeln und Knoblauch kurz darin d\u00fcnsten. Mit Rotweinessig abl\u00f6schen,Dosentomaten mit Saft dazugeben. Basilikum mit den Stielen grob hacken und ebenfalls dazugeben. Kurz aufkochen, vom Herd nehmen und 30 Minuten ziehen lassen. In ein mit einem Mulltuch ausgelegtes gro\u00dfes K\u00fcchensieb gie\u00dfen und 30 Minuten abtropfen lassen (ergibt ca. 400 ml Tomatenfond).<\/li>\n<li>\u00a0F\u00fcr die Hippen den Parmesan fein reiben. Bei mittlerer Hitze jeweils 60 g Parmesan in einer beschichteten Pfanne (21 cm \u00d8) gleichm\u00e4\u00dfig d\u00fcnn ausstreuen. Wenn der Parmesan zu schmelzen beginnt und nach 4-5 Minuten eine goldgelbe Farbe auf der Unterseite hat, den Parmesanfladen mit einer Palette wenden. Wenn die zweite Seite ebenfalls goldgelb ist, den Parmesanfladen mithilfe einer Palette aus der Pfanne heben und mittig auf eine umgedrehte Kaffeetasse legen (der Fladen muss dabei sehr hei\u00df sein, damit er sich um die umgedrehte Kaffeetasse legt und die Form einer Hippe erh\u00e4lt). Abk\u00fchlen lassen und vorsichtig von der Tasse heben. Auf K\u00fcchenpapier stellen.<\/li>\n<li>\u00a0Den abgetropften Tomatenfond bei mittlerer Hitze auf 100 ml einkochen lassen. Abk\u00fchlen lassen. Mit Salz, Pfeffer und etwas Zucker abschmecken. Das restliche Oliven\u00f6l dazugie\u00dfen und unterr\u00fchren.<\/li>\n<li>\u00a0F\u00fcr den Salat die Pinienkerne in einer Pfanne ohne Fett goldbraun r\u00f6sten. Abk\u00fchlen lassen. Salatmischung putzen, waschen, trocken schleudern und in eine gro\u00dfe Sch\u00fcssel geben. Kirschtomaten halbieren und mit den Oliven zur Salatmischung geben. Die H\u00e4lfte der Tomaten- Vinaigrette zum Salat geben und vorsichtig mischen.<\/li>\n<li>\u00a0Parmesanhippen auf Tellern anrichten, mit dem Salat f\u00fcllen und mit Pinienkernen bestreuen.
